Melanies' favorite recipe: Saffron risotto with prawns
At ValueQuest, we don't believe in run-of-the-mill feedback solutions. Every organization is different. That's why we develop surveys that are tailored to your specific requirements - whether you are an SME or a large corporation. Good collaboration and inspiration don't just happen at your desk, but sometimes also over lunch or dinner. That's why we not only share our expertise here, but also our favorite recipes from the ValueQuest team.
This is how it's done
- Heat the vegetable stock. Finely chop the onion and chili. Heat the olive oil in a pan and briefly sauté the onion and chilli.
- 2. add the risotto rice and stir well. Sauté everything together for about half a minute.
- Deglaze the risotto with 1-2 ladles of vegetable stock. Turn the heat down to medium. Add the saffron and stir.
- When making risotto, it is important to always add enough vegetable stock to cover the rice, but not too much so that the rice floats in the vegetable stock. The rice must absorb the liquid slowly. The stock is only used up after about 20-25 minutes of cooking. It must also be stirred carefully at regular intervals.
- 5 Grate the zest from the orange into the risotto. Then squeeze the juice from the orange and add to the risotto. The risotto should now simmer in the pan for approx. 10 mins. Now add the prawns.
- After about 20 minutes, taste the rice to see if it is soft. Depending on how soft it is, you may need to add more vegetable stock. Just before the risotto is ready, add the half cream. Depending on how creamy you want the risotto to be, add all or a little less. Add a little pepper. Grate the parmesan over it before serving.
En Guete!
