About Ivan Guglielmana

Ivan has been working as a software developer and IT specialist for many years. His job is more than just work for him. It is a real passion for him. Ever since he was young, he has been fascinated by everything to do with new media, technology and digital innovation, whether it's artificial intelligence, virtual reality or new programming frameworks

At ValueQuest, Ivan develops web-based applications and internal tools. He is part of the IT team, where he contributes his technical experience and his sense for clean, well-thought-out code. His colleagues appreciate him not only for his Italian butter biscotti, which he brings back from Valchiavenna (IT) every time, but also for his humorous nature.

After completing his master's degree in computer science at the University of Milano-Bicocca, his focus remained on learning, experimenting and tinkering. Synthesizers, electronic drums, VR glasses, old computer parts and programmable robots stand side by side in his private studio. IT and musical talent can't go together? Oh yes they can! In his spare time, Ivan produces electronic music, used to DJ and loves experimenting with sounds - from the legendary Roland 909 to modern midi controllers.

When he wants to switch off, he watches series. His favorites are Breaking Bad, Succession or The Last of Us. Or he plays football with his son. He dreams of becoming a professional goalkeeper and Ivan often accompanies him to matches and training sessions.

And anyone who knows Ivan knows that cooking is his second great passion (as befits an Italian). He is particularly proud of his spezzatino di vitello, which he prepares with a lot of patience and a touch of grappa or chili vodka. "Patience is the secret of every good code - and every good spezzatino," he says with a wink.

This is how it's done

  • 30 minutes + 1.5 to 2 hours stewing time
  1. Heat the olive oil in a heavy casserole. Season the veal cubes with salt and pepper and fry in batches until they start to color. Remove the meat and put to one side. In the same pan, sauté the onion, carrot and celery for 5-7 minutes until lightly browned. Fry the garlic briefly.
  2. Add the tomato puree and stir for 1 minute until the contents of the pan take on color and darken.
  3. Deglaze with white wine, bring to the boil briefly and reduce the liquid by about half. Return the meat to the pan. Pour in the stock, add the bay leaf and rosemary. Cover and simmer over a low heat for 1.5 to 2 hours until the meat is tender. Stir occasionally and check that there is enough liquid in the pot. Add peas or potatoes in the last 20-30 minutes.
  4. Season to taste with salt and pepper.

  • 800g veal stew (shoulder or starter)
  • 2-3 tbsp olive oil
  • 1 large onion, finely chopped
  • 1 carrot, diced
  • 1 stalk of celery, diced
  • 2 cloves of garlic, crushed
  • 1 tbsp tomato puree
  • 200 ml white wine (dry)
  • 400 ml veal or vegetable stock
  • 1 bay leaf
  • 1 sprig of rosemary
  • Salt and pepper

Optional (classic Lombard):

  • 1 handful of peas
  • 1-2 diced potatoes (for more binding)
